Preparation Steps
  1. In a glass bowl or resealable plastic bag, combine the juice and zest of the orange and lime, red wine vinegar, olive oil, honey, soy sauce, minced garlic, and minced jalapeno. Mix well.
  2. Sprinkle in salt, ground cumin, dried thyme, ground allspice, crushed red pepper, ground black pepper, and ground cinnamon. Mix thoroughly.
  3. Add the chicken pieces to the marinade and ensure they are well-coated. Marinate in the refrigerator for 2 to 3 hours, preferably overnight.
  4. After marinating, remove the chicken and let it rest at room temperature for 10–15 minutes. Preheat your grill, oven, or skillet.
  5. Cook the chicken on the grill for 6–8 minutes on each side, or until the internal temperature reaches 165°F. For baking, cook at 375°F for 25–30 minutes.
  6. Let the chicken rest for a few minutes before serving. Enjoy with yellow rice or mango salsa.
