- Begin by grating 4-5 medium-sized bright and firm carrots using a box grater or food processor. Place the grated carrots into a large mixing bowl.

- In a separate bowl, combine 2 minced garlic cloves, 3 tablespoons of rice vinegar, 2 tablespoons of toasted sesame oil, 1 teaspoon of salt, 1 teaspoon of sugar, and optional chili flakes. Whisk until well combined.

- Pour the prepared seasoning mixture over the grated carrots and gently toss until every piece is thoroughly coated.

- Cover the bowl with plastic wrap and let it marinate for at least 20 minutes at room temperature.

- Just before serving, toss the salad again to redistribute the flavors. Optionally, garnish with sesame seeds.
