  • 3 cups Rotisserie Chicken shredded
For the Creamy Dressing
  • 1/2 cup Mayo made with Avocado Oil or regular mayo if unavailable
  • 1/2 cup Plain Greek Yogurt or sour cream for a different flavor
  • 1 clove Garlic or garlic powder if necessary
  • 2 tablespoons Extra Virgin Olive Oil or another light oil if desired
  • 2 tablespoons Lemon Juice fresh juice recommended
  • 1 teaspoon Lemon Zest use fresh zest
For the Crunchy Ingredients
  • 1/4 cup Fresh Basil chopped
  • 1 cup Celery diced
  • 1/4 cup Red Onion diced
For Seasoning
  • 1 teaspoon Sea Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 teaspoon Cumin optional

Method
 

Steps
  1. In a blender, combine the mayo made with avocado oil, plain Greek yogurt, fresh basil, garlic, extra virgin olive oil, lemon juice, lemon zest, cumin, sea salt, and black pepper. Blend on high for about 30 seconds until smooth.
  2. Shred your rotisserie chicken in a medium bowl, aiming for bite-sized pieces.
  3. Add diced celery and chopped red onion to the bowl with the shredded chicken. Pour the blended dressing over the chicken mixture and fold gently to combine.
  4. Serve immediately or refrigerate in a sealed container for meal prep. Allow chilling for at least 30 minutes to meld flavors.
