Ingredients
  

For the Muffin Batter
  • 2 cups All Purpose Flour Can substitute with whole wheat or gluten-free flour.
  • 3/4 cup Granulated Sugar Brown sugar can be used for deeper flavor.
  • 1 cup Greek Yogurt Can substitute with sour cream.
  • 1/2 cup Vegetable Oil Can substitute with melted butter.
  • 2 Eggs For vegan, use flax eggs.
  • 1/4 cup Lemon Juice Freshly squeezed is recommended.
  • 1 tablespoon Lemon Zest Fresh zest preferred.
  • 1 tablespoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
For the Streusel Topping
  • 1/2 cup Brown Sugar Can substitute with granulated sugar.
  • 1/3 cup All Purpose Flour Whole wheat flour can also be used.
  • 1/4 cup Unsalted Butter Can use cold coconut oil for dairy-free.
  • 1 teaspoon Cinnamon Optional but recommended.
  • 1/2 cup Rolled Oats Can be omitted if desired.

Method
 

Instructions
  1. Preheat your oven to 400°F (205°C) and prepare the muffin tin.
  2. Whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt in a large mixing bowl.
  3. In a separate bowl, whisk together the Greek yogurt, vegetable oil, eggs, lemon juice, and lemon zest.
  4. Gently fold the wet ingredients into the dry ingredients until just combined.
  5. Fold in the blueberries gently.
  6. Spoon the batter into muffin cups, filling them about two-thirds full, and sprinkle on the streusel topping.
  7. Bake for 15-20 minutes, or until the tops are golden brown and a toothpick comes out clean.
  8. Cool in the muffin tin for 5 minutes before transferring to a wire rack.
