Method
 

Preparation Steps
  1. Toast the bread lightly in a toaster or skillet over medium heat for 2-3 minutes until golden brown. Set aside.
  2. In a medium bowl, scoop out the avocado and add lemon juice, salt, and pepper. Mash until creamy with a few chunky bits.
  3. Spread the mashed avocado over the first slice of bread. Repeat with the second slice.
  4. Layer the thinly sliced cucumber evenly over the avocado on one slice.
  5. Add leafy greens and sprinkle red onions on top of the cucumbers.
  6. Sprinkle fresh herbs over the assembled layers.
  7. Drizzle olive oil or spread your favorite sandwich spread over the top layer.
  8. Close the sandwich with the second slice of bread, press down gently, and cut in half diagonally to serve.
