- Preheat your oven to 400°F (200°C). Line a sheet pan with parchment paper.
- Place a wire rack on the lined sheet pan if available, or set the wrapped carrots directly on the parchment paper.
- Wrap each thin carrot with a slice of bacon, starting from the top and working down, avoiding overlap.
- Roast in the preheated oven for 30 minutes.
- Mix together maple syrup and chopped thyme in a bowl.
- After 30 minutes, remove the pan and baste the carrots with the maple-thyme mixture.
