Preparation Steps
  1. Preheat your oven to 300°F (150°C).
  2. Season the beef short ribs with sea salt and black pepper on all sides.
  3. Heat 2 tablespoons of olive oil in a heavy-bottomed pot and sear the ribs for about 4 minutes on each side.
  4. Remove the ribs and sauté one diced yellow onion until soft, then add minced garlic and cook for an additional minute.
  5. Pour in beef stock, bourbon, maple syrup, tamari, apple cider vinegar, and mustard; stir until combined.
  6. Return the ribs to the pot, cover, and braise for 2.5 to 3 hours until tender.
  7. Rest the dish for 10 minutes, then skim excess fat from the sauce.
  8. Serve the ribs with creamy mashed potatoes or crusty bread.
