Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, toss the sweet potato cubes with olive oil, garlic powder, salt, and pepper. Spread on one half of the baking sheet.
  3. In the same bowl, combine chicken breasts with olive oil, maple syrup, apple cider vinegar, thyme, salt, and pepper.
  4. Place marinated chicken on the other half of the baking sheet.
  5. Transfer the baking sheet to the oven and roast for 25-30 minutes.
  6. While roasting, melt butter in a skillet and toast chopped pecans for 3-4 minutes.
  7. Once cooked, remove from oven and sprinkle toasted pecans over the sweet potatoes.
  8. Transfer to a serving platter and garnish with fresh parsley.
