- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, toss the sweet potato cubes with olive oil, garlic powder, salt, and pepper. Spread on one half of the baking sheet.
- In the same bowl, combine chicken breasts with olive oil, maple syrup, apple cider vinegar, thyme, salt, and pepper.
- Place marinated chicken on the other half of the baking sheet.
- Transfer the baking sheet to the oven and roast for 25-30 minutes.
- While roasting, melt butter in a skillet and toast chopped pecans for 3-4 minutes.
- Once cooked, remove from oven and sprinkle toasted pecans over the sweet potatoes.
