  • 3 cloves Garlic Fresh minced is recommended.
  • 1/2 cup Kalamata Olives Can be omitted.
  • 3 tablespoons Olive Oil Can substitute with avocado oil.
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
For the Topping
  • 1 cup Feta Cheese Can be omitted for dairy-free.
  • Fresh Parsley Optional, for garnish.
  • 2 pieces Lemon Wedges Can use lime if preferred.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a large baking dish with olive oil.
  2. Slice chicken breasts into uniform chunks and prepare the vegetables by slicing zucchini, bell peppers, onion, and halving the cherry tomatoes.
  3. In a large mixing bowl, combine chicken, zucchini, bell peppers, onion, cherry tomatoes, and Kalamata olives. Drizzle with olive oil and add seasonings. Toss everything together.
  4. Transfer the mixture to the greased baking dish and bake for about 30 minutes until chicken is cooked through.
  5. Garnish with crumbled feta cheese and fresh parsley. Serve with lemon wedges.
