Method
 

Step‑by‑Step Instructions
  1. Chop the salmon into pea-sized pieces and set aside.
  2. Heat olive oil in a skillet over medium heat, add onion and sauté for 4-5 minutes.
  3. Add minced garlic and stir for 1 minute, then add spinach and cook until wilted (2-3 minutes).
  4. Combine salmon and cooled spinach mixture, add remaining ingredients, and fold gently.
  5. Shape into 8 equal patties, chill in the refrigerator for 15 minutes.
  6. Pan-fry the patties in olive oil for 4-5 minutes on each side until golden brown.
  7. Drain any excess oil, serve warm with lemon wedges and tzatziki.
