For the Creamy Tzatziki
  • 1 cup Greek Yogurt Dairy-free yogurt can be used for vegan options.
  • 1/2 cup Cucumber (grated) Squeeze out excess moisture.
  • 1 clove Garlic (minced)
  • 1 tbsp Dill or Mint Use what's handy.
  • 1 tbsp Lemon Juice Zest can be added for extra flavor.

Preparation Steps
  1. Marinate the Steak: In a bowl, combine olive oil, minced garlic, lemon juice, dried oregano, thyme, salt, and black pepper. Place the sirloin steak into the marinade and let it marinate for at least 30 minutes.
  2. Prepare the Tzatziki: Mix Greek yogurt, grated cucumber, minced garlic, lemon juice, and chopped dill or mint in a bowl. Chill in the fridge.
  3. Whisk the Vinaigrette: In a small bowl, combine olive oil, lemon juice, salt, and pepper. Whisk until emulsified.
  4. Cook the Steak: Heat a skillet over medium-high heat. Sear the steak for 4-5 minutes per side, then let it rest for 5 minutes before slicing.
  5. Assemble the Bowl: Layer cooked grains at the bottom, then sliced steak, tzatziki, and toppings.
  6. Drizzle with Vinaigrette: Finish your bowl with the freshly whisked vinaigrette and serve immediately.
