Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C). Line your baking sheet with parchment paper.
  2. Brush both sides of the corn tortillas with canola oil and arrange them on the baking sheet. Bake for about 10 minutes, flipping halfway, until golden and crispy.
  3. In a medium saucepan, combine shredded rotisserie chicken, taco seasoning, black beans, corn, and salsa. Heat through for about 5 minutes.
  4. Load crispy tortillas with ½ cup of the chicken mixture and top with shredded cheese.
  5. Return to oven and bake for an additional 5 minutes until cheese is melted and bubbly.
