  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1 cup cucumber diced
  • 1 medium red onion finely chopped
  • 1 cup grape tomatoes halved
  • ½ cup Kalamata olives sliced
  • 1 cup Greek-style tzatziki sauce
  • 1 teaspoon garlic powder optional
  • 1 teaspoon dried oregano

  • ½ cup feta cheese crumbled
  • ¼ cup fresh parsley chopped, for garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. Spread uncooked white rice evenly on the bottom of the baking dish.
  3. Pour chicken broth over the rice, ensuring it is submerged.
  4. Layer the cooked chicken on top of the rice evenly.
  5. Scatter diced cucumber, chopped red onion, halved grape tomatoes, and Kalamata olives on top.
  6. In a separate bowl, combine Greek-style tzatziki sauce with garlic powder, dried oregano, salt, and pepper.
  7. Spread the tzatziki mixture evenly over the layered ingredients.
  8. Sprinkle crumbled feta cheese over the top of the casserole.
  9. Cover the baking dish tightly with aluminum foil and bake for 45 minutes.
  10. Remove the foil and bake uncovered for an additional 10 minutes.
  11. Let the casserole cool for a few minutes and garnish with chopped parsley before serving.
