Step‑by‑Step Instructions
  1. Begin by cutting your beef stew meat into bite-sized pieces, ensuring uniform cooking. Next, halve the baby potatoes for even texture. For a head start on tender potatoes, consider parboiling them for 5 minutes.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the beef pieces, making sure not to overcrowd the pan. Sear the beef for about 3-4 minutes, turning until all sides are nicely browned.
  3. In a mixing bowl, combine ½ cup of melted unsalted butter, 4 cloves of minced garlic, 1 teaspoon of onion powder, 1 teaspoon of smoked paprika, 1 teaspoon each of dried thyme and rosemary, and salt and pepper to taste. Stir until well combined.
  4. In your slow cooker, layer the halved baby potatoes first, then add the seared beef on top. Pour the garlic butter sauce evenly over the mixture, followed by 1 cup of beef broth.
  5. Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours. Check for doneness; the beef should be fork-tender.
