Step‑by‑Step Instructions
- Begin by cutting your beef stew meat into bite-sized pieces, ensuring uniform cooking. Next, halve the baby potatoes for even texture. For a head start on tender potatoes, consider parboiling them for 5 minutes.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the beef pieces, making sure not to overcrowd the pan. Sear the beef for about 3-4 minutes, turning until all sides are nicely browned.
- In a mixing bowl, combine ½ cup of melted unsalted butter, 4 cloves of minced garlic, 1 teaspoon of onion powder, 1 teaspoon of smoked paprika, 1 teaspoon each of dried thyme and rosemary, and salt and pepper to taste. Stir until well combined.
- In your slow cooker, layer the halved baby potatoes first, then add the seared beef on top. Pour the garlic butter sauce evenly over the mixture, followed by 1 cup of beef broth.
- Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours. Check for doneness; the beef should be fork-tender.
- Once your Garlic Butter Beef Bites & Potatoes are done cooking, allow the dish to rest for about 10 minutes with the lid on. Serve warm and enjoy!
