- Allow the lamb chops to sit at room temperature for 20-30 minutes. Pat the chops dry with a paper towel and season with salt, black pepper, and optional red pepper flakes.
- Heat a cast iron skillet over medium-high heat with olive oil. Sear the chops for 3-4 minutes on each side until golden crusted.
- To the skillet, add unsalted butter, minced garlic, and fresh rosemary. Baste the lamb chops with the garlic butter mixture for 2-3 minutes.
- Check internal temperature of lamb chops for 130°F for medium-rare. Rest for 5-7 minutes covered with foil.
- Serve with a squeeze of fresh lemon juice.
