  • 2 tablespoons Avocado Oil Substitute with coconut oil or olive oil if needed.
  • 1 medium Shallot Chopped.
  • 3 cloves Garlic Minced.
  • 1 tablespoon Grated Ginger Fresh is best.
For the Curry
  • 3 tablespoons Thai Red Curry Paste Adjust to taste.
  • 6 cups Cubed Squash or Pumpkin Kabocha or butternut squash recommended.
  • 2 cans (13.5 oz) Coconut Milk Full-fat for best consistency.
  • 1 block Extra Firm Tofu Cut into squares.
  • 1 each Lime Zest
  • 1 each Lime Juice
  • 2 tablespoons Coconut Sugar Brown sugar may be used.
  • 1 teaspoon Salt Adjust based on preference.
  • 2 each Kafir Lime Leaf Optional.
For Garnishing
  • 0.5 cups Cilantro Chopped.
  • 0.25 cups Pumpkin Seeds
  • 1 teaspoon Chili Flakes Optional.

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of avocado oil in a large Dutch oven over medium-high heat. Add 1 chopped shallot and sauté for about 3 minutes until translucent.
  2. Stir in 3 cloves of minced garlic and 1 tablespoon of grated ginger, cooking for an additional 2 minutes until fragrant.
  3. Pour in 2 cans of coconut milk, stirring constantly to achieve a smooth mixture. Allow it to come to a gentle simmer for 3-4 minutes.
  4. Add in 6 cups of cubed pumpkin, 1 block of cubed tofu, lime zest, coconut sugar, and salt. Bring to a simmer, cover, and cook for about 15 minutes.
  5. Remove from heat, stir in lime juice, and adjust tanginess. Serve over jasmine rice or quinoa, garnished with cilantro, pumpkin seeds, and chili flakes.
