Method
 

Step-by-Step Instructions for Peach Caprese Salad
  1. Slice fresh mozzarella into ½ inch pieces, and set aside. Halve the ripe peaches, remove the pits, and cut into wedges. Core and slice heirloom tomatoes into wedges. Tear or chop the fresh basil.
  2. In a large salad bowl, gently combine the sliced mozzarella, peach wedges, and tomato slices. Add the torn basil leaves and toss lightly.
  3. Drizzle with extra virgin olive oil, and sprinkle with kosher salt and freshly ground pepper. Toss gently again to mix.
  4. Transfer to a serving platter, and optionally drizzle with balsamic reduction before serving.
