- Preheat your oven to 350°F (180°C) and prepare a 9x13-inch baking pan.
- In a food processor, combine the all-purpose flour, granulated sugar, and salt. Add cold butter and pulse until coarse crumbs form.
- Press the remaining crumb mixture into the bottom of the prepared pan to form an even crust. Bake for 15 minutes until slightly browned.
- Mix reserved crumb mixture with brown sugar until clumpy for the streusel topping.
- Combine granulated sugar, flour, cinnamon, and salt in a bowl. Stir in chopped peaches, heavy cream, and vanilla until mixed.
- Pour peach filling over the warm crust and sprinkle with streusel topping.
- Bake for 45 minutes until juices bubble and topping is golden brown.
- Allow to cool completely on a wire rack before refrigerating for at least 2 hours.
- Cut into squares and serve.
