- In a mixing bowl, whisk together Greek yogurt, peanut butter, honey, and vanilla extract until smooth and well-combined.
- Gently fold in chocolate chips and any optional chopped nuts or seeds using a spatula for even distribution.
- Line a mini muffin tin or silicone molds with liners and lightly spray with cooking spray.
- Pour the yogurt mixture into prepared molds, filling each cavity about ¾ full, and tap to release air bubbles.
- Place the molds in the freezer and allow to set for 2-3 hours until firm.
- Carefully remove the bites from the molds, using warm water if they stick, and store in an airtight container in the freezer.
