  • 1/4 cup Olive Oil For frying.

Step-by-Step Instructions
  1. Grate the zucchini and carrots, then squeeze out excess moisture using a clean dish towel or paper towels.
  2. In a large mixing bowl, combine grated zucchini and carrots with all-purpose flour, beaten eggs, chopped onion, and parsley. Season with salt and pepper. Mix gently until just combined.
  3. Heat olive oil in a non-stick skillet over medium heat until hot, about 2-3 minutes.
  4. Spoon 2 to 3 tablespoons of batter for each fritter into the hot skillet. Fry for about 3 to 4 minutes on each side until golden brown and crispy.
  5. Remove fritters and drain on paper towels. Serve warm with your favorite dipping sauce.
