Step-by-Step Instructions
  1. Cut chicken thighs into bite-sized pieces and set aside. Chop pineapple if using fresh.
  2. In a large skillet, heat oil over medium-high heat. Add chicken and season with salt. Sear for 6-8 minutes until golden.
  3. In the same skillet, combine soy sauce, rice vinegar or lime juice, sweetener, and a cornstarch slurry. Stir and simmer for about 2 minutes.
  4. Stir in pineapple chunks and heat through for 2-3 minutes, ensuring even coating with the sauce.
  5. Return cooked chicken to skillet, tossing with pineapple and sauce for 1-2 minutes.
  6. Serve over prepared rice, garnishing with green onions or sesame seeds if desired.
