Ganache Topping
  • 1 cup Double Cream Can use dairy-free alternative
  • 8 ounces Dark Chocolate
Decorations
  • 1 cup Green Buttercream Made with butter, icing sugar, milk, and coloring
  • 1 pack Oreos Crushed for topping
  • 12 pieces Fondant Pumpkins Can be made or bought ready-made

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F) and line your baking trays with parchment paper.
  2. Cream together the butter, light brown sugar, and caster sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well incorporated.
  4. Gradually add the plain flour, cocoa powder, baking powder, bicarbonate of soda, and salt, mixing gently.
  5. Fold in the milk chocolate chips until evenly distributed.
  6. Shape the dough into balls and flatten slightly before placing on trays.
  7. Bake the cookies for around 12 minutes, until slightly soft in the center.
  8. Prepare the ganache by melting dark chocolate and double cream in the microwave.
  9. Make the green buttercream and transfer to a piping bag for decoration.
  10. Once cookies are cool, drizzle with ganache, add fondant pumpkins, crushed Oreos, and pipe buttercream.
