- Preheat your oven to 180°C (350°F) and line your baking trays with parchment paper.
- Cream together the butter, light brown sugar, and caster sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well incorporated.
- Gradually add the plain flour, cocoa powder, baking powder, bicarbonate of soda, and salt, mixing gently.
- Fold in the milk chocolate chips until evenly distributed.
- Shape the dough into balls and flatten slightly before placing on trays.
- Bake the cookies for around 12 minutes, until slightly soft in the center.
- Prepare the ganache by melting dark chocolate and double cream in the microwave.
- Make the green buttercream and transfer to a piping bag for decoration.
- Once cookies are cool, drizzle with ganache, add fondant pumpkins, crushed Oreos, and pipe buttercream.
