Step-by-Step Instructions for Raspberry Oatmeal Crumble Bars
- Preheat your oven to 350°F (175°C) and prepare an 8x8-inch square pan with cooking spray and foil.
- Melt ½ cup of butter in a microwave-safe bowl for about 1 minute and let cool slightly.
- Whisk together ½ cup of granulated sugar, ½ cup of light brown sugar, and 1 teaspoon of vanilla extract into the melted butter.
- Stir in 1 cup of all-purpose flour, 1 cup of old-fashioned rolled oats, and a pinch of salt until crumbly. Reserve 1 heaping cup for topping.
- Press the bulk of the mixture into the bottom of the prepared pan to create an even layer.
- Spread 1 cup of raspberry preserves evenly over the crust.
- Sprinkle the reserved crumble mixture over the raspberry preserves.
- Bake for approximately 30 minutes until edges are set and lightly golden. Let cool for at least 2 hours.
