  • 2 cups Strawberries hull and slice into quarter-inch pieces
  • 1 cup Blueberries rinse well
  • 2 cups Grapes wash, remove from stems, halve if large
  • 2 cups Pineapple cut into uniform chunks
  • 1 can Mandarin Oranges drained thoroughly
Creamy Dressing
  • 1 package Instant Vanilla Pudding Powder do not substitute with prepared pudding
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Almond Extract optional but recommended

Method
 

Preparation
  1. Wash strawberries, blueberries, grapes, and pineapple under cool running water. Hull strawberries and slice into quarter-inch pieces. Rinse grapes and remove from stems, halving large ones. Cut pineapple into uniform chunks.
  2. In a large mixing bowl, combine strawberries, blueberries, grapes, pineapple chunks, and thoroughly drained mandarin oranges. Stir carefully.
  3. Sprinkle instant vanilla pudding powder over the fruit mixture and mix well. Add vanilla and almond extracts. Gently fold until fruits are coated.
  4. Cover the bowl and refrigerate for at least 2 hours to allow flavors to meld.
  5. Before serving, give the salad a gentle stir and spoon into bowls or clear glasses for an appealing presentation.
