  • 1 clove Garlic fresh
  • 0.5 cup Tahini
  • 2 tbsp Fresh lemon juice
  • 1 tbsp Dijon mustard
  • ¼ cup Parmesan cheese optional
For the Crunchy Toppings
  • 2 slices Hearty whole-wheat bread cut into bite-sized pieces
  • ¼ cup Roasted sunflower seeds

Method
 

Roasting the Brussels Sprouts
  1. Preheat your oven to 500°F (260°C) and line two baking sheets with parchment paper.
  2. Trim and halve the Brussels sprouts and toss with olive oil, salt, and pepper. Arrange cut-side down on one baking sheet.
  3. Roast the Brussels sprouts covered with foil for 15 minutes, then uncover and roast for an additional 10 minutes, until golden brown.
Making the Dressing
  1. Finely chop the anchovy fillets and garlic, adding a pinch of salt. Mash them together to form a paste.
  2. Mix the paste with tahini, lemon juice, Dijon mustard, and olive oil in a bowl. Whisk until smooth.
Preparing the Croutons
  1. Toss the bread pieces with olive oil, salt, and pepper, then bake on the second baking sheet for about 5 minutes until golden brown.
Assembling the Salad
  1. In a large bowl, toss the roasted Brussels sprouts with the creamy tahini dressing.
  2. Sprinkle the roasted croutons and sunflower seeds on top before serving.
