Step-by-Step Instructions for Rolo Twix Bites
  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper or a silicone mat.
  2. Place half of the Mini Nilla Wafers on the prepared baking sheet, flat side up. Position one unwrapped Rolo on top of each wafer.
  3. Bake the Rolos for about 90 seconds until slightly glossy but not completely melted.
  4. Place another Mini Nilla Wafer on top of each melted Rolo, gently pressing down to create a sandwich.
  5. Chill the sandwiches in the refrigerator for about 10 minutes to firm up.
  6. In a microwave-safe bowl, combine chocolate chips and vegetable oil. Heat in 30-second intervals, stirring until smooth.
  7. Dip each chilled sandwich into the melted chocolate, shaking off excess, and place back on the baking sheet.
  8. Return the baking sheet to the refrigerator to let the chocolate set for approximately 20 minutes.
