Ingredients
  

For the Meatballs
  • 1 pound Ground Beef or substitute with ground turkey or chicken
  • 1/2 cup Breadcrumbs or use gluten-free breadcrumbs if necessary
  • 1/4 cup Milk any variety or plant-based alternative
  • 1 medium Onion finely chopped
  • 2 cloves Garlic minced
  • 1 large Egg can be omitted for a vegan option
  • 1 tablespoon Worcestershire Sauce or swap for soy sauce
  • 1 teaspoon Salt adjust to taste
  • 1/2 teaspoon Black Pepper adjust to taste
  • 1 tablespoon Dried Parsley
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
For the Gravy
  • 2 cups Beef Broth or use vegetable broth for a lighter option
  • 1/4 cup All-Purpose Flour or use cornstarch for a gluten-free option
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Dijon Mustard
For the Mashed Potatoes
  • 2 pounds Potatoes peeled and chopped
  • 4 tablespoons Butter or substitute with olive oil
  • 1/4 cup Fresh Parsley chopped

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C). Gather your ingredients and equipment.
  2. In a large bowl, combine ground beef, breadcrumbs, milk, onion, garlic, egg, Worcestershire sauce, salt, pepper, parsley, onion powder, and garlic powder. Mix until just combined. Shape into meatballs.
  3. Place meatballs on a parchment-lined baking sheet and bake for about 20 minutes until cooked through.
  4. While meatballs bake, bring salted water to a boil in a large pot. Cook potatoes until tender, about 15-20 minutes. Drain thoroughly.
  5. Add drained potatoes back to the pot with garlic, butter, and milk. Mash to desired consistency and stir in chopped parsley. Season with salt and pepper.
  6. In a frying pan, whisk together flour over medium heat for about 1 minute. Gradually stir in beef broth while whisking. Add soy sauce and mustard, simmering until gravy thickens.
  7. Transfer baked meatballs to the gravy, stir to coat, and simmer for 2-3 minutes.
  8. Plate meatballs beside creamy garlic herb mashed potatoes and drizzle with extra gravy. Garnish with parsley.
