Ingredients

For the Sauce
  • 8 oz Bacon Adds richness and flavor; omit for a vegetarian version or use diced chorizo.
  • 1 Onion Provides an aromatic base for the sauce; shallots are a great substitute.
  • 28 oz Diced tomatoes Main component that brings moisture and acidity; fresh tomatoes can also work.
  • 1 cup Water Thins out the sauce to your desired consistency; adjust based on thickness preference.
  • 1 Chipotle chile in adobo Infuses smoky heat; for milder flavor, use canned diced green chiles.
  • 1 tbsp Lime juice Balances flavors with acidity; fresh lemon juice can substitute in a pinch.
  • 1 tsp Kosher salt Enhances overall flavor; sea salt or table salt can also be used.
  • 2/3 cup Cilantro Fresh herb that brightens the dish; parsley can offer a different flavor profile.
For the Eggs
  • 8 Eggs The star of the dish, cooked directly in the sauce; substitutes available for lower cholesterol options.
  • 8 Corn or small flour tortillas Serve huevos rancheros with these as the perfect vehicle; whole-wheat tortillas make a healthy choice.
For the Topping
  • 1 cup Cheddar cheese Melts beautifully and adds creaminess; consider Monterey Jack or Pepper Jack for a twist.

Equipment

  • large skillet
  • Slotted Spoon
  • Paper Towels
  • Kitchen towel

Method

Cooking Steps
  1. In a large skillet over medium heat, cook the bacon until crispy and golden brown, about 6-8 minutes. Transfer to a paper towel-lined plate to drain the excess grease.
  2. Add the diced onion to the skillet with the bacon fat, sautéing over medium heat until tender and translucent, approximately 5-7 minutes.
  3. Stir in the chopped bacon, diced tomatoes, water, chipotle chile, lime juice, and kosher salt into the sautéed onions. Simmer over medium heat for about 10 minutes.
  4. Once the sauce has thickened, stir in half of the chopped cilantro.
  5. Create small wells in the sauce and crack in the eggs. Cover and cook for 6-10 minutes until the whites are set.
  6. Heat another skillet over medium heat and warm the tortillas for 1-2 minutes on each side.
  7. Sprinkle the remaining cheddar cheese over the cooked eggs and sauce, allowing it to melt before serving.
