  • 2 tablespoons Creole Seasoning Cajun seasoning is a good alternative
  • 1 can Rotel Diced Tomatoes with Green Chilies Other diced tomatoes can be substituted
  • 15 ounces Black Beans Rinsed; kidney beans or chickpeas can be used
  • 1 cup Chicken Broth Vegetable broth for a vegetarian option
  • 1 cup Long Grain Rice Brown rice can replace, adjust cooking time
  • 1 cup Water

Method
 

Cooking Instructions
  1. In a large skillet, heat two tablespoons of vegetable oil over medium heat until shimmering. About 1-2 minutes.
  2. Add chopped onion and green onions, sautéing for about 3-4 minutes until softened.
  3. Stir in minced garlic and sliced smoked sausage, cooking for an additional 3-5 minutes until browned.
  4. Stir in creole seasoning, Rotel diced tomatoes, black beans, chicken broth, and long grain rice.
  5. Bring to a boil over medium-high heat, reduce to low, cover, and simmer for 20-25 minutes.
  6. Remove from heat and let sit for 5 minutes before fluffing the rice and serving hot.
