Method
 

Instructions
  1. Preheat the oven to 400°F (200°C).
  2. In a medium bowl, combine honey, chipotle chili powder, olive oil, garlic powder, salt, and black pepper to create the marinade.
  3. Coat the chicken thighs with the marinade and marinate for at least 15 minutes.
  4. Peel and chop the potatoes, boil in salted water for 15-20 minutes until fork-tender.
  5. Transfer marinated chicken thighs into a baking dish and bake for 25-30 minutes, or until cooked through.
  6. Mash the drained potatoes with milk, butter, and smoked gouda until creamy. Season with salt and pepper.
  7. Serve chicken thighs with mashed potatoes and drizzle any pan juices over the chicken.
