Prepare Noodles
- Cook the udon noodles according to package instructions, boiling them for 8-10 minutes until tender but chewy. Drain and rinse under cold water.
Sauté Chicken
- Heat sesame oil in a skillet over medium-high heat. Cook chicken for 5-7 minutes until golden and fully cooked. Remove and let rest.
Stir-Fry Vegetables
- In the same skillet, stir-fry bell peppers and carrots in more sesame oil for 3-4 minutes until bright and tender.
Combine Ingredients
- Return chicken to the skillet, add udon noodles, soy sauce, and vegetable broth. Stir gently for 2-3 minutes until everything is heated through.
Add Garlic & Garnish
- In the last minute, add minced garlic, stir and remove from heat. Garnish with chopped green onions.
