Step-by-Step Instructions for Spicy Coconut Noodles
  1. Cook the rice noodles according to package instructions, about 6-8 minutes, drain and rinse.
  2. In a pan, heat vegetable oil, sauté garlic and ginger for 1-2 minutes.
  3. Mix in red curry paste and cook for 1-2 minutes.
  4. Add soy sauce and sesame oil, simmer for a minute.
  5. Gradually pour in coconut milk while stirring.
  6. Incorporate vegetable broth and simmer for 2-3 minutes.
  7. Mix in brown sugar, lime juice, and chili flakes.
  8. Allow sauce to thicken for 3-5 minutes.
  9. Combine cooked noodles with sauce, toss to coat.
  10. Stir in peanut butter until melted.
  11. Adjust seasoning with sriracha, salt, and pepper.
