Ingredients

For the Casserole Base
  • 1 pkg Frozen Cauliflower Rice A low-carb base for this dish; riced broccoli can be used for a different twist.
  • 1 lb Ground Beef Provides protein and robust flavor; feel free to substitute with ground turkey or chicken for a leaner option.
  • 1 medium Red Bell Pepper Adds a touch of sweetness and vibrant color; any bell pepper variety works beautifully.
  • 1 medium White Onion Introduces aroma and depth to the dish; yellow onion serves as a great alternative.
For the Flavor
  • 2 tbsp Taco Seasoning The heart of the flavor profile; consider homemade or adjust store-bought to suit your spice preference.
  • 2 tbsp Tomato Paste Thickens and enriches flavor; diced tomatoes can be substituted for added moisture.
  • 1 cup Water Essential for incorporating spices and achieving the right consistency; this ingredient has no substitutes needed.
For the Topping
  • 2 cup Shredded Colby/Jack Cheese Melts beautifully for a cheesy finish; cheddar or mozzarella are fantastic alternatives.
  • 1 cup Sour Cream Adds a creamy touch to complete the dish; Greek yogurt offers a healthier option.
For the Toppings
  • 1 cup Chopped Lettuce Provides a fresh crunch to your serving.
  • 1 medium Chopped Tomato Adds juiciness and bursts of flavor.
  • 1/2 cup Sliced Black Olives Offers a mild, briny flavor; perfect for taco lovers.
  • 1 medium Avocado/Guac A creamy addition that elevates each bite.
  • 1/4 cup Cilantro A bright herb to garnish and freshen up the dish.
  • 1 medium Sliced Jalapeno For those who crave a bit of heat!
  • 1/2 cup Salsa/Hot Sauce Adds layers of flavor and spice, enhancing the overall taste.

Equipment

  • 2-quart casserole dish
  • large skillet

Method

Preparation Steps
  1. Preheat your oven to 350°F (175°C). Gather your ingredients and prepare your cooking equipment, including a greased 2-quart casserole dish and a large skillet.
  2. In your skillet, add a splash of oil and toss in the frozen cauliflower rice. Sauté it over medium heat for about 5–7 minutes, until golden and tender. Spread the sautéed cauliflower rice evenly in the greased casserole dish.
  3. Increase the heat to medium-high and add ground beef to the skillet. Stir in the chopped red bell pepper and onion, browning for 5–7 minutes until cooked through and translucent. Drain any excess fat and set aside.
  4. In the skillet with your cooked beef, add the taco seasoning, tomato paste, and a splash of water. Stir well and cook for another 2–3 minutes, allowing flavors to meld and the liquid to reduce slightly.
  5. Carefully layer the seasoned beef mixture over the cauliflower rice in your casserole dish, spreading it out evenly.
  6. Sprinkle a generous amount of shredded Colby/Jack cheese across the top of the beef layer. Place the casserole dish in your preheated oven and bake for 10–15 minutes, or until the cheese is bubbling and lightly golden.
  7. Remove from the oven and let it cool for a few minutes. Spread a layer of sour cream over the top, then add desired fresh toppings such as chopped lettuce, diced tomatoes, or sliced jalapenos.
