Preparation Steps
- Preheat your oven to 350°F (175°C). Gather your ingredients and prepare your cooking equipment, including a greased 2-quart casserole dish and a large skillet.
- In your skillet, add a splash of oil and toss in the frozen cauliflower rice. Sauté it over medium heat for about 5–7 minutes, until golden and tender. Spread the sautéed cauliflower rice evenly in the greased casserole dish.
- Increase the heat to medium-high and add ground beef to the skillet. Stir in the chopped red bell pepper and onion, browning for 5–7 minutes until cooked through and translucent. Drain any excess fat and set aside.
- In the skillet with your cooked beef, add the taco seasoning, tomato paste, and a splash of water. Stir well and cook for another 2–3 minutes, allowing flavors to meld and the liquid to reduce slightly.
- Carefully layer the seasoned beef mixture over the cauliflower rice in your casserole dish, spreading it out evenly.
- Sprinkle a generous amount of shredded Colby/Jack cheese across the top of the beef layer. Place the casserole dish in your preheated oven and bake for 10–15 minutes, or until the cheese is bubbling and lightly golden.
- Remove from the oven and let it cool for a few minutes. Spread a layer of sour cream over the top, then add desired fresh toppings such as chopped lettuce, diced tomatoes, or sliced jalapenos.
