  • 100 grams Blue Cheese Crumble; goat cheese can be used as an alternative
  • 100 grams Parmesan Cheese Grated; substitute with nutritional yeast for vegan
  • 50 grams Walnuts Chopped; omit for nut-free or swap with sunflower seeds
  • 6-8 sprigs Fresh Thyme Leaves Can use dried thyme, use half the amount
  • 2 tablespoons Honey Maple syrup can be used as a vegan substitute

Method
 

Preparation Steps
  1. Preheat your oven to 180°C (350°F) for fan ovens or 200°C (390°F) for non-fan ovens.
  2. Lay out your two sheets of puff pastry on a floured surface and drizzle about two tablespoons of honey over each sheet.
  3. Sprinkle the blue cheese, Parmesan cheese, and chopped walnuts over the honey pastry.
  4. Add the fresh thyme leaves and season with sea salt and cracked pepper.
  5. Roll the pastry tightly into a log and slice each log in half lengthwise.
  6. Twist each half into a coil shape and place on a parchment-lined baking sheet.
  7. Brush the tops with milk for a golden finish.
  8. Bake for 25 to 30 minutes until puffed and golden brown.
  9. Allow to cool slightly before serving, garnished with extra thyme.
