- Preheat the oven to 400°F (200°C). Scrub the russet potatoes, pierce them with a fork, and set aside.
- Rub the potatoes with olive oil, sprinkle with salt and pepper, then place on a baking sheet and bake for 45-60 minutes until fork-tender.
- While baking, heat a skillet over medium heat, add ground beef, and cook until browned, about 6-8 minutes. Drain excess fat.
- Add taco seasoning and water to the skillet, stir to coat the meat, and simmer for 5 minutes.
- Remove potatoes from the oven, slice each one lengthwise, and fluff the insides with a fork.
- Fill each potato with ground beef mixture and top with shredded cheddar cheese. Return to oven for 10-15 minutes until cheese is melted.
- Garnish with sour cream, tomatoes, green onions, olives, and cilantro before serving.
