  • 1 tablespoon Taco Seasoning or to taste

  • 1 cup Shredded Cheddar Cheese or pepper jack cheese for spice
  • 1 cup Sour Cream or Greek yogurt as a healthier option
For the Garnish
  • 1 cup Green Onions sliced
  • 1 cup Diced Tomatoes
  • 1/2 cup Black Olives sliced
  • 1/4 cup Cilantro chopped
For Seasoning
  • 2 tablespoons Olive Oil for coating the potatoes

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C). Scrub the russet potatoes, pierce them with a fork, and set aside.
  2. Rub the potatoes with olive oil, sprinkle with salt and pepper, then place on a baking sheet and bake for 45-60 minutes until fork-tender.
  3. While baking, heat a skillet over medium heat, add ground beef, and cook until browned, about 6-8 minutes. Drain excess fat.
  4. Add taco seasoning and water to the skillet, stir to coat the meat, and simmer for 5 minutes.
  5. Remove potatoes from the oven, slice each one lengthwise, and fluff the insides with a fork.
  6. Fill each potato with ground beef mixture and top with shredded cheddar cheese. Return to oven for 10-15 minutes until cheese is melted.
  7. Garnish with sour cream, tomatoes, green onions, olives, and cilantro before serving.
