Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes, toss with olive oil, garlic powder, paprika, salt, and pepper, then roast for 20-25 minutes.
  3. Season the chicken with garlic powder, onion powder, salt, and black pepper, then sauté in olive oil for 5-7 minutes until cooked through.
  4. Prepare the creamy sauce by whisking together Greek yogurt or mayonnaise, lime juice, sriracha, cumin, paprika, and cayenne. Set aside.
  5. Cook the rice according to package instructions.
  6. Steam or sauté your green vegetables until tender, about 3-5 minutes.
  7. Assemble the bowls with a base of rice, topped with sweet potatoes, chicken, and vegetables. Drizzle with sauce and garnish.
