- Slice the flank steak against the grain into 1/4 inch thick pieces and marinate with soy sauce, peanut oil, and 1 tablespoon of cornstarch for 10 minutes.
- Whisk together stock, Shaoxing wine, soy sauce, dark soy sauce, brown sugar, and the remaining cornstarch to make the sauce.
- Steam broccoli florets in boiling water for about 1 minute until bright green and tender-crisp, then remove and set aside.
- Heat a tablespoon of oil in a nonstick skillet over high heat and cook marinated beef for about 1 minute, flipping halfway.
- Add garlic and ginger to the beef, cooking for another 15 seconds until fragrant.
- Return broccoli to skillet, pour sauce over mixture, and stir gently; cook for another minute until sauce thickens.
