For the Cod
  • 4 fillets Cod Tilapia or haddock can be excellent substitutes

Method
 

Step‑by‑Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat for about 2 minutes until shimmering.
  2. Add 1 diced onion and sauté for roughly 5 minutes until translucent and golden.
  3. Introduce 3 minced garlic cloves and stir for about 1 minute until fragrant.
  4. Add 1 cup of roasted red peppers, 1 cup of vegetable broth, 1 teaspoon of smoked paprika, 1 teaspoon of dried oregano, along with salt and pepper. Simmer for around 10 minutes.
  5. Blend the sauce in the skillet or transfer to a blender to achieve a smooth consistency.
  6. Gently place 4 cod fillets in the skillet, cover with sauce, and cook for 8-10 minutes until the cod is opaque and flakes easily.
  7. Remove from heat, chop fresh parsley, and garnish over the cod. Serve immediately.
