Ingredients
  

For the Chicken
  • 4 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper to taste
  • 1 teaspoon Smoked paprika
For the Sauce
  • 1/2 cup Soy sauce or gluten-free tamari
  • 1/4 cup Honey
  • 2 tablespoons Dijon mustard
  • 1 cup Chicken broth or vegetable broth
  • 1 teaspoon Dried thyme or herbs like basil or oregano
For the Aromatics
  • 1 large Onion (sliced)
  • 4 cloves Garlic (minced)
For Thickening the Sauce
  • 2 tablespoons Cornstarch
  • 2 tablespoons Water
For Searing
  • 2 tablespoons Olive oil or vegetable oil
For Garnish
  • 1/4 cup Fresh parsley chopped

Method
 

Preparation Steps
  1. Pat the chicken breasts dry and season with salt, pepper, and smoked paprika. Let them sit for a few minutes.
  2. In a skillet, heat olive oil over medium-high heat and sear the chicken for 3 minutes on each side until golden brown.
  3. Layer sliced onion and minced garlic in the crockpot.
  4. Place the seared chicken on top of the onions and garlic in the crockpot.
  5. In a bowl, whisk together chicken broth, soy sauce, honey, Dijon mustard, and thyme; pour over the chicken.
  6. Cover and cook on Low for 6-7 hours or High for 3-4 hours.
  7. Remove chicken, cover with foil, and let it rest.
  8. Whisk cornstarch with water, add to the sauce in the crockpot, and cook on High for 10-15 minutes until thickened.
  9. Return chicken to the crockpot, serve with the thickened sauce, and top with fresh parsley.
