Preparation Steps
- Pat the chicken breasts dry and season with salt, pepper, and smoked paprika. Let them sit for a few minutes.
- In a skillet, heat olive oil over medium-high heat and sear the chicken for 3 minutes on each side until golden brown.
- Layer sliced onion and minced garlic in the crockpot.
- Place the seared chicken on top of the onions and garlic in the crockpot.
- In a bowl, whisk together chicken broth, soy sauce, honey, Dijon mustard, and thyme; pour over the chicken.

- Remove chicken, cover with foil, and let it rest.
- Whisk cornstarch with water, add to the sauce in the crockpot, and cook on High for 10-15 minutes until thickened.
- Return chicken to the crockpot, serve with the thickened sauce, and top with fresh parsley.
