Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Combine ground beef, chopped onion, cilantro, jalapeño, garlic, cumin, chili powder, smoked paprika, salt, and pepper in a mixing bowl.
  3. Fold in shredded cheddar cheese and crushed tortilla chips.
  4. Mix in an egg until fully combined.
  5. Form the mixture into golf-ball-sized meatballs.
  6. Heat olive oil in a skillet and sear meatballs until golden brown.
  7. Pour canned tomatoes with green chilies over the meatballs.
  8. Bake in preheated oven for 15-20 minutes until internal temperature reaches 160°F (71°C).
  9. Serve with fresh lime wedges.
