  • 1 medium Eggplant salt and drain before use
  • 1 medium Onion yellow or white for best results
  • 2 cloves Garlic minced, adjust to taste
  • 15 ounces Tomato Sauce or your favorite marinara
  • 2 cups Mozzarella Cheese fresh preferred for better melting
  • 1 tablespoon Italian Seasoning or fresh herbs if available
  • 1 tablespoon Olive Oil or vegetable oil if preferred
  • to taste Salt and Pepper essential seasonings

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Slice the eggplant into ½-inch rounds, sprinkle with salt, and let sit for 20 minutes.
  3. In a large skillet, heat olive oil over medium heat, add chopped onions, and sauté for 3-4 minutes.
  4. Stir in minced garlic and cook for an additional minute.
  5. Add ground beef, breaking it apart, and cook for 6-8 minutes until fully browned.
  6. Stir in tomato sauce, Italian seasoning, salt, and pepper, simmer for 5 minutes.
  7. In a greased baking dish, layer salted eggplant, then half of the beef mixture, repeat.
  8. Top with mozzarella cheese and bake for 30-35 minutes until golden.
