  • 1 Onion yellow or white onion, diced
  • 2 cloves Garlic fresh minced
  • 1 teaspoon Cumin adjust according to taste
  • 1 tablespoon Chili Powder increase for extra heat
For the Enchiladas
  • 8 Tortillas flour or corn tortillas
  • 2 cups Enchilada Sauce store-bought or homemade
  • 2 cups Shredded Cheese cheddar or Mexican cheese blend

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Heat oil in a skillet and cook ground beef with diced onions for 5-7 minutes until browned.
  3. Stir in minced garlic, cumin, and chili powder, and sauté for an additional minute.
  4. Fill each tortilla with the beef mixture, rolling tightly and placing seam-side down in the dish.
  5. Pour enchilada sauce over the rolled tortillas.
  6. Sprinkle shredded cheese evenly over the top.
  7. Bake uncovered for 20-25 minutes until cheese is bubbly and edges are golden brown.
  8. Remove from oven, let cool for a few minutes, then serve hot.
