  • 2 cups Spinach Optional
  • 1 cup Shredded Cheese Consider dairy-free cheese for vegan option
For the Topping
  • 1 cup Greek Yogurt/Sour Cream Can substitute with avocado

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and prick each sweet potato several times with a fork. Bake for 45-50 minutes until tender.
  2. Once cool, slice each sweet potato lengthwise and scoop out the flesh into a mixing bowl. Mash sweet potato with olive oil and ground cumin until smooth.
  3. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Then, add ground turkey and cook for 7-10 minutes until browned.
  4. Stir in diced tomatoes, black beans, corn kernels, grated zucchini, and optional spinach, cooking for an additional 5 minutes.
  5. Preheat your broiler and line a baking sheet with parchment. Spoon the mashed sweet potato back into each skin, then layer with turkey filling and cheese.
  6. Broil for 6-8 minutes until cheese is melted and bubbly.
  7. Top with chopped green onions, Greek yogurt or sour cream, and salsa before serving.
