For the Chicken

For the Sauce
  • 1/4 cup Soy Sauce can substitute with tamari for gluten-free
  • 2 tablespoons Honey maple syrup can be an alternative
  • 1 tablespoon Rice Vinegar apple cider vinegar can also work
  • 2 cloves Garlic fresh minced garlic preferred
  • 1-2 tablespoons Sriracha adjust according to spice tolerance
  • 1 teaspoon Sesame Oil a dash of olive oil works too
  • 1 teaspoon Ground Ginger fresh ginger for more vibrant taste
  • 1 tablespoon Arrowroot Powder cornstarch or tapioca starch are substitutes
For the Spicy Mayo
  • 1/2 cup Mayo try Greek yogurt for a lighter alternative
  • 1-2 tablespoons Sriracha adjust based on taste
  • 1 tablespoon Water to thin mayo to desired consistency
  • 1 tablespoon Sesame Seeds for garnish, can use chopped green onions

Method
 

Step‑by‑Step Instructions
  1. Cook the sticky rice according to package instructions, about 15-20 minutes until tender.
  2. Chop the broccoli into small florets and steam or sauté for 3-5 minutes until bright green.
  3. Slice the chicken breasts into strips and season with salt, pepper, smoked paprika, chili powder, onion powder, and oregano.
  4. In a skillet, heat olive oil over medium-high and cook seasoned chicken strips for 7-10 minutes until golden and cooked through.
  5. In a bowl, whisk soy sauce, honey, rice vinegar, minced garlic, sriracha, sesame oil, ground ginger, and arrowroot powder. Pour over cooked chicken and simmer for 3-4 minutes.
  6. In a small bowl, mix mayo, sriracha, and a splash of water until desired consistency. This will serve as a drizzle.
  7. Assemble the bowls with a layer of sticky rice, add chicken and broccoli, drizzle with spicy mayo, and sprinkle sesame seeds on top.
