- Bring a large pot of salted water to a boil over high heat. Add the fresh lo mein noodles and cook for 2-3 minutes until al dente.
- Drain the noodles in a colander, optionally rinse under cold water, and toss with vegetable oil to prevent sticking.
- In a medium mixing bowl, whisk together light soy sauce, dark soy sauce, oyster sauce, granulated sugar, white pepper, cornstarch mixed with water, and sesame oil. Set aside.
- Heat vegetable oil in a large wok over medium-high heat. Add minced garlic, grated ginger, and white parts of green onions. Sauté until fragrant.
- Add cooked lo mein noodles to the wok, pour in the prepared sauce, and toss everything together for 2-3 minutes until well coated.
- Add the green parts of green onions and toss for an additional minute to heat thoroughly. Serve hot.
