Cooking Steps
- Preheat your oven to 400°F (200°C).
- Generously season the pork tenderloin with salt and pepper.
- Heat a drizzle of olive oil in a large skillet over medium-high heat. Sear the pork for 3–4 minutes on each side until browned.
- Transfer the pork to the preheated oven and roast for 20–25 minutes, until the internal temperature reaches 145°F (63°C).
- In the same skillet, reduce the heat to medium and sauté minced garlic and chopped shallot for 2–3 minutes until fragrant.
- Deglaze the skillet with chicken broth, scraping up any browned bits. Simmer gently.
- Stir in heavy cream, Dijon mustard, and thyme; simmer for about 5 minutes until thickened.
- Remove the pork from the oven, let it rest for 5 minutes, then slice and serve drizzled with the sauce.
