Method
 

Cooking Steps
  1. Preheat your oven to 400°F (200°C).
  2. Generously season the pork tenderloin with salt and pepper.
  3. Heat a drizzle of olive oil in a large skillet over medium-high heat. Sear the pork for 3–4 minutes on each side until browned.
  4. Transfer the pork to the preheated oven and roast for 20–25 minutes, until the internal temperature reaches 145°F (63°C).
  5. In the same skillet, reduce the heat to medium and sauté minced garlic and chopped shallot for 2–3 minutes until fragrant.
  6. Deglaze the skillet with chicken broth, scraping up any browned bits. Simmer gently.
  7. Stir in heavy cream, Dijon mustard, and thyme; simmer for about 5 minutes until thickened.
  8. Remove the pork from the oven, let it rest for 5 minutes, then slice and serve drizzled with the sauce.
