- In a stand mixer, combine all-purpose flour, sugar, instant yeast, warm milk, melted butter, and salt. Mix on medium speed for 4-5 minutes until smooth.
- Let the dough rise in a warm environment for 30-60 minutes until doubled in size.
- Preheat the oven to 450°F. Bring 10 cups of water to a boil and add 2/3 cup of baking soda.
- Turn the risen dough onto a clean surface and divide it into 12 pieces. Shape into ¾-inch thick ropes and cut into 1-2 inch pieces.
- Boil pretzel bites in the baking soda solution for 30 seconds. Use a slotted spoon to transfer to baking sheets.
- Whisk together an egg and water for egg wash. Brush on tops of bites and sprinkle with coarse salt.
- Bake for 12-14 minutes until golden brown.
- Allow to cool slightly before serving warm with your favorite dipping sauce.
