Step-by-Step Instructions
  1. In a stand mixer, combine all-purpose flour, sugar, instant yeast, warm milk, melted butter, and salt. Mix on medium speed for 4-5 minutes until smooth.
  2. Let the dough rise in a warm environment for 30-60 minutes until doubled in size.
  3. Preheat the oven to 450°F. Bring 10 cups of water to a boil and add 2/3 cup of baking soda.
  4. Turn the risen dough onto a clean surface and divide it into 12 pieces. Shape into ¾-inch thick ropes and cut into 1-2 inch pieces.
  5. Boil pretzel bites in the baking soda solution for 30 seconds. Use a slotted spoon to transfer to baking sheets.
  6. Whisk together an egg and water for egg wash. Brush on tops of bites and sprinkle with coarse salt.
  7. Bake for 12-14 minutes until golden brown.
  8. Allow to cool slightly before serving warm with your favorite dipping sauce.
