Step-by-Step Instructions
- Begin by dicing the salmon fillets into 1 to 1.5-inch bite-sized pieces and lightly sprinkle them with salt to enhance their natural flavor.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once the oil is shimmering, carefully place the salmon pieces in the pan. Allow the salmon to cook for about 1 minute without disturbing it.
- After three minutes, remove the lid and gently flip the salmon bites using a spatula. Continue cooking for another 1.5 to 2 minutes, or until the salmon is golden brown on both sides.
- In a separate small saucepan, heat 1 tablespoon of oil over medium heat and add minced garlic. Sauté until the garlic turns golden and fragrant, about 1 minute.
- Stir in 1/4 cup of sweet chili sauce and 1 tablespoon of light soy sauce, cooking until the mixture bubbles and thickens slightly, approximately 2-3 minutes.
- Return the salmon bites to the saucepan with the sweet chili glaze. Gently stir to coat each piece thoroughly and heat for another 30 seconds.
- Remove the salmon bites from heat and transfer them to a serving dish. Garnish with chopped green onions or scallions.

Notes
Store leftover salmon bites in an airtight container for up to 2 days. Reheat in a skillet over low heat to avoid drying out.
