Step-by-Step Instructions
  1. Begin by dicing the salmon fillets into 1 to 1.5-inch bite-sized pieces and lightly sprinkle them with salt to enhance their natural flavor.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once the oil is shimmering, carefully place the salmon pieces in the pan. Allow the salmon to cook for about 1 minute without disturbing it.
  3. After three minutes, remove the lid and gently flip the salmon bites using a spatula. Continue cooking for another 1.5 to 2 minutes, or until the salmon is golden brown on both sides.
  4. In a separate small saucepan, heat 1 tablespoon of oil over medium heat and add minced garlic. Sauté until the garlic turns golden and fragrant, about 1 minute.
  5. Stir in 1/4 cup of sweet chili sauce and 1 tablespoon of light soy sauce, cooking until the mixture bubbles and thickens slightly, approximately 2-3 minutes.
  6. Return the salmon bites to the saucepan with the sweet chili glaze. Gently stir to coat each piece thoroughly and heat for another 30 seconds.
  7. Remove the salmon bites from heat and transfer them to a serving dish. Garnish with chopped green onions or scallions.
