- Prepare the Teriyaki Sauce by whisking together soy sauce, honey or brown sugar, rice vinegar, water, fresh ginger, and minced garlic in a small mixing bowl. Set aside.
- Heat vegetable oil in a large skillet over medium-high heat. Season the chicken thighs with salt and pepper. Cook for about 5-7 minutes on each side until golden brown and cooked through.
- Pour the prepared teriyaki sauce over the cooked chicken in the skillet. Stir to coat the chicken evenly in the sauce, allowing it to simmer.
- Mix cornstarch with a few tablespoons of water to create a slurry. Slowly add this to the skillet while stirring continuously until the sauce thickens, about 2-3 minutes.
- Remove from heat and garnish with sesame seeds and chopped green onions. Serve hot over steamed rice or alongside noodles.
