Step-by-Step Instructions
  1. Thaw the Puff Pastry: Let the frozen puff pastry thaw at room temperature for about 30 minutes.
  2. Roll Out the Puff Pastry: On a floured surface, roll each sheet of puff pastry to approximately 1/16 inch thick.
  3. Cut the Pastry Circles: Use a cutter to cut out about 30 rounds from the pastry and place on a parchment-lined baking sheet.
  4. Add the Gruyère Cheese: Sprinkle about 1 teaspoon of grated Gruyère cheese onto each pastry circle.
  5. Layer the Tomato Slices: Place one or two slices of tomatoes on top of the cheese layer on each tartlet.
  6. Season the Tartlets: Sprinkle kosher salt, black pepper, and chopped thyme over the tomatoes on each tartlet.
  7. Bake the Tartlets: Bake in a preheated oven at 400°F for 20–25 minutes until golden brown.
